Most pesto recipes call for garlic and some form of green herb like basil or cilantro. This garlic scape pesto recipe combines the garlic and the greens into one ingredient. This is a great way to use the garlic scapes that you prune from your garlic plants. They are also available in spring and early summer at farmer’s markets. Garlic scapes are the flower stalks on garlic plants that need to be pruned so the garlic bulbs will grow large. Here’s our favorite garlic scape pesto recipe.
6-8 garlic scapes, chopped
3/4 cup extra-virgin olive oil
1/4 cup pine nuts (other nuts like cashews or walnuts will work, too)
1 cup Parmesan, grated
1 T. lemon juice
salt, to taste
black pepper, to taste
Blend all ingredients until smooth. Enjoy!
Note: you can make this without nuts if you want but I love the extra bite they add to the pesto.
